Shrimp Quesadillas

The quesadilla is like the Julio version of a grilled ham and cheese sandwich. OK, hopefully you took my advise and you now have some left over peel and eats in the fridge. Get them out and peel some (get a little more than you think you will need because you or someone else won't be able to resist snacking on a few while preparing). In a small skillet, heat a pat or two of butter.
Place a medium tortilla in the pan and and spin to coat the tortilla.
Cover one half of the tortilla with shrimp.
Top with a good quality Mexican cheese and optionally peppers, onions, ect; whatever blows your skirt up.
Let it sit for a minute or two; do not over brown.
Now fold over and flatten .
Continue to cook on one side until a crispy golden brown.
Flip over and do the same for the other side.
Take it up and enjoy! Not too bad for a gringo!
